Chez Nous Hosts Student-Prepared Fall Dinners

The Northern Michigan University hospitality and tourism management program will host a series of five-course themed dinners during the month of November. Seating times for each dinner are at 4:30, 5:15 and 6:30 p.m. in Chez Nous at the NMU Jacobetti Complex. Chez Nous is a high-end restaurant that provides students a training ground for menu design, food preparation and service.

The available dinners follow. All include free non-alcoholic beverages.

Fall Into Autumn will be offered on Nov. 1. The fall-inspired menu includes a bacon and dried cranberry stuffed pork tenderloin, apple cider glazed chicken and pumpkin cobbler.

A Nostalgic Culinary Trip Down I-75 will take place on Nov. 2. The menu includes a Michigan-themed romaine salad with warm bacon dressing and Michigan cherries, and a choice of smoked brisket with Georgia peach bourbon glaze or southern fried catfish and key lime pie with whipped cream.

A Night of Glamour will be offered on Nov. 8. The 1920s themed dinner will feature chicken a la rose, lemon garlic steak and a special dessert.

Fiesta Like There’s No Manana will take place on Nov. 9. Authentic Mexican dishes include fish ceviche, street corn soup, carrot mole salad, fried avocado tacos, lamb birria and classic flan.

The Dragon’s Delight will be offered on Nov. 15. The menu focuses on Far East dishes including spiced-anko Japanese dumplings and a choice of teriyaki-glazed salmon or a sesame chicken vegetable stir-fry. The dinner will conclude with a matcha cotton cheesecake with house made whipped cream and candied pistachios.

Explore the Globe will take place on Nov. 16. The dinner will include authentic flavors from Finland, Canada, Germany and Egypt.

Taste of Turkey will be offered on Nov. 27. Highlights from the Turkey-inspired dinner include lentil soup and a sweet custard.

An Alaskan Adventure will be offered on Nov. 28. The dinner will include a variety of Alaskan cuisine including small game, king crab and baked Alaska.
