U.P. Chefs Present Scandinavian Dinner at NMU
A six-course Scandinavian dinner with paired wines will be presented by the Beaumier U.P. Heritage Center and the U.P. Chapter of the American Culinary Federation on Tuesday, May 10, at Northern Michigan University. A cocktail reception with cash bar begins at 6 p.m. in the University Center Great Lakes Rooms. Dinner will follow at 6:30. The registration deadline is May 5.
Upper Peninsula chefs have designed each course. The appetizers include juniper cured Menominee herring; coriander-spent grain blini, maple crème fraiche; and smoked Artic char caviar. The soup course features spring pea bisque with mustard crema and fried bread. Norwegian lefse will be served before the entrée of “Sjoman’s Beef” filet medallion with celery root, roasted carrot and spring onion anise broth. The dinner will end with desserts: Kladdkaka, “sticky chocolate cake,” lingonberry cardamom ice cream and funnel cake crisp.
The Thimbleberry Band will provide musical entertainment and the U.P. Folklife Awards will be presented after the entrée course.
